Five for Friday – Easy. Yummy. Healthy (recipes)!

Happy Friday, everyone! Hope you are enjoying a beautiful summer. Sunshine has been proven to improve brain function and brain activity has been shown to peak in the summer months. So, if you’ve got a creative planning meeting or complicated matter to solve, perhaps you move that meeting outside today for some extra rays of enlightenment. 🙂 

This week’s Five for Friday is shared with us by an FMN board member, Dr. Lynette Stanko as she throws out some simple, great, and healthy recipes to mix into your week.

I tend to cook primarily vegetarian- I know that ultimately, it is better for the environment, better for preventing animal cruelty, and better for my body! I wanted to share five of my favorite vegetarian recipes. Most of these are super easy and very family friendly!

 

Spicy Sweet Potato and Green Rice Burrito Bowls

This meal if filling, hearty, DELICIOUS, and makes really easy leftovers. This one takes a little bit of leg work, so it’s a great one to meal prep on the weekend. My secret is that I skip several steps, like toasting the pepitas, browning the rice, and covering the rice with a towel. It saves a ton of time and doesn’t skimp on flavor! Cookie and Kate is a fabulous vegetarian website that is packed with healthy and delicious recipes!

Instapot Pad Thai Stir Fry

This is for my Instapot lovers! (But also, instructions are included if you don’t have an Instapot). This is somehow REALLY easy, and has the most delicious peanut sauce that isn’t scary to make! It’s a crowd pleaser.

Vegetarian Enchiladas

Who doesn’t love enchiladas?!? This is a filling comfort food that is great for sharing with friends, since it makes ten enchiladas!

Spicy Tomato Chickpeas with Quinoa

This is very meal prep friendly, and is full of protein! It is one of the easiest recipes, and I can usually make it with leftover cans I can find in my pantry.

Instant Pot Lentil Curry

I love curry! I also love topping this recipe with a fried egg. It’s a nice to change up the flavors you are using so you don’t get bored, and this one is really creative! Can you tell I adore my Instapot?
